I don't publish my novels until they're done. Then I just revise as I go. After letting it sit for some time. But yes, you could do that.

Change is good. However, if you don't update the old to the new, you could just end up with a bunch of plot holes and inconsistencies with the end product. What we usually show readers are drafts. And those can change with time.
