It was a huge mistake of mine not mentioning I was talking about SH specifically. Because foxes in manga are difficult to find. At least for me. It is always either a slime or this weird dog\wolf if we talk about pet. Ok, rarely it's a dragon. If we talk about monstergirls it is obviously catgirls. I don't think I ever saw a kitsune in a manga. I don't mean to say they don't exist, it's just I haven't encountered them, or don't remember them. Meanwhile catgirls are everywhere. I sometimes see kitsunes or gumihos in CN and KR webtoons. In case of CN webtoon there are usually many other monstergirls featured.(Also, specifically in regards to stories here on Scribble, I think a lot of people don't want a cat protagonist because cats and catgirls have been used a lot more in anime and other media and have a solid number of preconceptions and tropes. For foxes, there's been much less of that, and people created the tropes they like, which became popular here and normal for the site.)

I think at this point the popular tropes are so diluted it isn't possible to properly predict when a new trend might appear. There was a time demons (particularly succubi) were rapidly growing in popularity, but it doesn't look like they reached or will ever reach the level of foxes unless something huge happens. In general, I think right now we need to wait for something immensely popular to appear before the trends change in a significant manner.

But I will try to explain anyways. Foxes are grouped in with the household pets of cats and dogs, yet are basically never kept as a pet.
You see cats crossing roads, dogs on walks, bunnies muching on plants, birds on roofs and trees, squirrels being chased by said dogs, deer wandering into towns, and more. Lots of commonly seen animals, but you rarely ever see foxes unless you go out of your way to find them.
Going off that, we know the behavior of various cat and dog breeds, but we usually resort to pulling fox personalities from their various mythologies. This sort of makes then a blank slate for the personalities of individuals.
Why not other not commonly seen animals? What about bears, snakes, spiders, bats, or frogs? Bears snakes and spiders we have been told to be careful of, even frogs to a lesser extent are often poisonous in tropical areas. Bats are also usually left out of thought (at least for me) because they are more region specific. We never are told to be wary of foxes when out hiking.
Looking at this another way, foxes have soft fur like many mammals, but a calm bear is a lot less common than a calm fox. Spiders, many people have aracniphobia. Snakes are smooth like lizards, smooth is a nice texture, but not as nice as soft IMO. Frogs are like snakes but slimy, and slimy is icky IMO.
Ulike many other animals, people are not threatened by foxes. They may have a reputation about being "cunning hunters" but they don't hunt humans.

I don't know if it is a case elsewhere, but keeping foxes is basically illegal here. You need a permit. Want to keep a fox as a pet? No, permit first. Want to raise them for furs? Nope, a permit. Want to sell hats from foxes? Nope, a permit. Hate foxes you want to shoot them? NO, PERMIT!
