Browsing through popular novels and genres here, my conclusion was: not many are girls
hey! Girls enjoy harem too! Especially people like me where we were exposed to Japanese media from trashy harem animes like SAO

I feel like that's half-correct, or at least not detailed enough for my liking. Our minds are gendered, yes, I do see it in myself. I also have no qualms to the latter. In regards to our minds being gendered though, there's a very useful thing I think is called a neutral pronoun.

As a side note, I prefer to make a distinction between neutral and 'it'; it's generally the same thing but 'it' implies inanimatedness while neutral (I mostly use 'they' with it) does not.

The thing with the neutral pronoun is that it's outside any gender by its very definition. Even if don't count any other ways I may see people (personally I think I have at least three more, though it often gets really debatable there), that one's definitely very common. TheTrashWriter will be a volunteer, actually. Nothing I know about them would make me think they're specifically male of female, and until I do, they're in that group of peeps who don't fall to either side. And no matter how I think about it now, nah, I don't think I've assigned them any gender. That's a true neutral right there.
Hmm. The following are my own observations and thoughts on the matter; however, I do not claim them to be true.

In my mind, when I'm interacting with a new person, there are three categories: a girl, a boy, and the third option being neither. This is important, I feel, because the other side is a person and they deserve recognition. When dealing with an AI, it becomes a non-issue.

At this stage, it is in a superposition, so we use a neutral pronoun such as 'they;' similar to the third alternative but not quite the same. The vast majority of people I encounter online fall into this category. However, our brains aren't excellent at dealing with the ambiguous or unknown, so for convenience and effectiveness of communication, it generally assigns a gender based on context clues, or possibly just your preferences. For internet users, the default stance appears to be 'he.' Of course, it is not something you assert to the other person, and the conscious mind may not be thinking about it at all.

As you mentioned, there's no reason for me to think The TrashyWritter is not a girl, boy, or none, and the best part is that we won't know until they say so. A study was conducted where scientists had a group of students speak to an androgynous person for thirty minutes, after which each participant was given a different answer to their gender. Everyone thought it made sense—it turned out that they went back on previous conversations and identified qualities they assigned to the gender of the respondent.
I know because some of my friends refer to me as a guy, which makes complete sense to them. But if I claim I'm a girl, I'm very confident they'll agree that it also makes sense.

So, in essence, the gender assigned by the subconscious is fluid because it realizes that it is only utilized for convenience, and once we are certain of it, switching over is simple and makes sense. The only slight issue, provided you are not sexist, is when you've been using it for so long that it becomes conscious, contextual (the person is being sarcastic or jokey), or contrary evidence. Again, these are happening at the subconscious level, and you are consciously neutral, or you believe you are, since logically it could be any of them.

One way to test this is if you've seen someone mention their gender and there was some immediate friction or affirmation—even minor. It could happen as a means of recalling earlier interactions. And I believe that one's age also works similarly. Notable examples would be monotone puppet's gender revelation thread and Voidiris' age reveal.

I ask myself always why people care about gender.
Because gender is your identity and it is wrong to not respect someone's sense of self or identity, imo

First I have no identity.
Second respecting others sense of self feels like a joke as grand as equality, because part of the identity is the personality and goals.
You should now know why respecting others sense of self only functions if you like or respect the personality.
You might mean something different and I just misunderstood you but now I'm hateful either way,
