It isn't a romance novel per se, but a fantasy novel. Terry Goodkind's Sword of Truth series has a good romance between the MC and one of the Female protagonists. It spans several books, where he rescues her, she saves him, and the two go back and forth, building their relationship. They eventually get married, then a whole host of other things happen that test their resolve.

Uhhh. Think my favorite anime of all time is Inuyasha. I remember watching it when it first came out when I was a kid.
I've watched it over 60 times since then and it's been my influence in a good bit of things.

Manga/novel is a bit harder to have a favorite imo. There's just so many good genres/sub genres.

You know ... the best story is what makes you remember it for years. This anime does it in a bittersweet way.

There are a number I really enjoyed. "Miracle Girls" was about a pair of twins with telepathy, teleportation, and psychometry, and also their boyfriends. Both the manga and the anime are worth seeing, and this one is older than even me.
"Kamisama Kiss" was about a highschool girl who became the Area God of the Mikage shrine, and her gallant but grumpy, not to mention tall, muscular, and usually underdressed kitsune familiar (in mostly foxboy but occasionally giant fox demon form).
"Kanata Kara/From Far Away" is about Noriko, freshly transported to a fantasy world where she is the prophesized Awakening. Izark would really prefer to not be transformed into the calamitous Sky Demon by the dreaded Awakening (think Yatagarasu, but bigger than Australia and tripping on henbane), but even though his dormant dark energies surge in her presence, he cannot bring himself to kill this cute and hardworking young lady.

And many others, I guess? I like to read historical romance because the protagonist could be my ancestors or past lives.

Without a doubt, the manga version of Insomniacs After School (anime version's cool but the manga's art and pacing are better). It basically does away with a lot of the stuff I dislike about anime romance. No "generic guy with no notable traits gets the prettiest, hottest girl in school because he's vaguely kind" bullshit. No self-perpetuating tropes like love triangles or misunderstandings. It just feels really organic. The characters get together because they relate to each other's issues and find comfort in each other's company. You know, like how real relationships work.

It's also pretty well-paced for a romance manga. You don't feel like you're dying to see the main couple get together because every single step of their relationship is compelling. Plus they're not shy about physical intimacy (also refreshing) even while their relationship is still platonic.

And also also the art's really gorgeous. It feels a bit like an iyashikei, especially with the lingering scenery shots.

Honorable mention: Mairimashita, Senpai. Super fast-paced shoujo manga (they get together by the end of the first chapter). The characters are incredibly mature despite being highschoolers. They actually communicate their feelings. Mind-blowing shit.

Strictly Romance... I'm going to have to go with Spice & Wolf. Even though the romance is a slow-burn secondary plot, it is prevalent throughout the series, and even more in-depth in the light novels.

YES! Another very great pick. There was even a (half-decent) TV series for it (Legend of the Seeker). I've actually got to add those to my list as well.
