You just need to try good mead, if all you could taste was alcohol, then it wasn't very good.

But any alcoholic beverage I've tried, all I can taste is the alcohol.

Even if the content of alcohol is exceptionally low, that's the biggest thing I can taste.
It's one of the reasons why I don't drink alcoholic beverages.
As for those beverages that have zero alcohol but give you the taste you'd get if it did...why the heck would I want to drink something that tastes of alcohol when it has none?
It baffles my mind.

Bailey's Irish Cream and Amaretto are tolerable if I take the absolute tiniest of sips.
A shot glass' worth would probably last me a few hours.

Tia Maria in tiramisu is okay, but I wouldn't have it on its own.
Whatever is used for truffle torte is okay, too, but I wouldn't have whatever it is on its own.

As for savoury food, I don't want anything alcoholic put into it, or else all I'll taste is the alcohol.
You might think I'm overexaggerating...but I'm really not.
Every time my family have secretly put wine or some other alcoholic beverage into savoury food, I've detected it and struggled to eat the meal as a result.
