I feel like this concept was taken from the Destiny games.
The Hive, once they've accumulated enough tribute, can make a throne world. Where in they are gods, and whenever outside of it, will respawn inside when killed. If killed inside they experience a true death. (Barring very specific scenarios.) This was explained to players in the very first DLC dark below. Which came out at the end of 2014. So if this concept existed before then, I guess Destiny might not be the source of it.

Give it properties that can enhance my health in the real world, and then enjoy all the tasty food I can get ahold of.

Bring all that food to the pocket dimension and then give it a time dilation effect so I can enjoy it over a longer period of time without having to rush. Also, enjoy various electronic games that don't require an internet connection and do all my writing while in the time-dilated pocket dimension.

Use the dimension as a weed farm.

If I can use it to farm and harvest it for RL use, I might consider opium as well in order to become the next Steeve.

At this point I might also dabble in arms deal and human trafficking.

Been reading too much Confinement King.

I would build a [Dungeon of Cuddles] where you get to cuddle with various types of furry monsters. These monsters will talk to you and make you feel happy and cuddly...

Unless it's better than real life (as in, not just a hyper-realistic computer he to play out my fantasies) I'd not do anything.

"immortal unless killed in your pocket dimension"
Or I'd seal it away as far from me as I can. Hell no, I'm not gambling with my life like this.

Depends; does it have working electricity in there? Gas? If not, is it possible to establish them? Does physics work differently there? Can I control the laws of physics in there, or at least alter them? Can my body sustain that alteration? Can I put that pocket dimension in my room while I'm out at work? Can others stay in said dimension while I'm away? Can they escape? Is there cellular signal where they can call someone else when I'm away? How expansive is that dimension? Does it take a physical toll to sustain an African continent's worth of space?

Way too many questions, I have.

I can't die of old age right? Lemme just shut myself in there forever, I can't die if I don't let anyone in. Imma become the ultimate NEET.

Don’t know, I will give a synopsis of Low Dimensional Game, so please tell me if it does originate from Destiny.
The story starts with the MC moving into his grandpa’s house after quitting his job. He has cancer and knows he won’t make it. When rummaging through his grandpa’s stuff, he finds a painting with a dot on it. He touches the dot and feels something mystical. Eventually he figures out that he can take from this reality, to create a new one. He starts by adding a bunch of soil and air. He also adds ants and watches them. The less complex the dimension the faster the speed in it compared to ours. MC can understand everything that happens in the dimension and one day, sees that the is an ant queen that can communicate to her ants using her mind and they seem to have a long life time, with all bodily attributes being enhanced. He finds out that this was due to a power originating from the dimension, and uses it on him self. He cures his cancer, and explores his powers and how they affect his life. (Here the author, quite blatantly, doesn’t know if they want this to be mainly about MC living in our world, or about what happens in the dimension. So, the story becomes slightly irritating. Stick with it though, it gets way better.) MC figures out that the power comes from things living and dieing in his dimension. Eventually all the ants die, and MC uses this power supplemented with energy from the sun, to create a new world. Through experiments he creates a system of magic and prevents other living things from directly tapping into that magic system. From here on we see many civilizations, their rise and fall, and what those mean for the future. I highly recommend this series 8/10!
