It's just that the whole idea seems like a paradox to me.
Vegans are against animal cruelty, not against food that tastes a certain way. Almost all vegans grew up non-vegan and got used to certain types of food. They still want to keep eating them after going vegan, just without unnecessary death and suffering.

As for how good fake meat is, what I've had ranges from amazing (Morningstar Farms Buffalo Wings) to so awful that they legally shouldn't be labeled as food (various veggie dogs). Most of the fake meats I've tried are pretty good, though. They're just really expensive.

Personally, I will never understand the attempts to make vegan or vegetarian "meat" as anything else than a stupid marketing strategy that for some even more stupid reason works. There's a huge amount of products that are already vegan or vegetarian, there's no reason to process them to make "meat" out of them, unless perhaps to help people with dietary issues transition but even then it's weird.

I recently saw tofu sausages in a shop. As if you couldn't eat tofu instead, duh. There's also mushroom burgers, bean burgers, soy sausages, and more. You wouldn't guess which vegan or vegetarian products they're made out of.

Some of them taste pretty good, but some are atrocious, and I've had very, very few that would beat less processed products like tofu.

The paradox is that vegan aren't supposed to eat meat, yet they are eating artificial meat.
it would be a paradox if vegans were born that way, but that's not the case;
the goal of vegan meat is to act as a bridge, it's not easy to give up the experience of eating meat

Veganism is an ethical position. It's not anti-gluten.

Unfortunately, there's a lot of overlap between the vegan community, the plant-based diet community, and the woo community, so a lot of dumb vegan-adjacent bullshit like the 30 bananas a day diet or whatever ends up getting labeled vegan.

Personally, my diet's about 40% flour. Gluten's good shit.
