Lemon Possets. Dark Chocolate. Warm Bread with Jam.
Simple Posset Recipe:
1 pint (2 cups) heavy cream
½ cup sugar
1 ½ teaspoons grated lemon zest*
⅓ cup lemon juice*
¼ teaspoon vanilla extract
*Does not need to be lemon, just needs to be citrus, so lemon, lime, key lime, grapefruit or oranges, the acid in the fruit is required for step 3 to work and posset to set up correctly.
1. Combine cream, sugar and zest in pan on medium heat and stir until sugar dissolves. Keep stirring for ~10-15 minutes until total volume reduces back down to 2 cups.
2. Pour through mesh strainer to remove zest and mix in lemon juice and vanilla extract.
3. Let sit out for 20 minutes at room temp to allow acid to curdle mixture.
4. Divide out into 8 1/4 cup servings and put in refrigerator for 2-3 hours to set up.
5. Serve with fruit compote or crumbled Graham crackers.
