A guild is basically a gathering of a group of people that has the same function in order to regulate or safeguard their function. For that reason, many of the adventurers guilds in fiction are correct in their definition and role. They provide a security force that protects people from monsters while being more free to do as they wish compared to the actual territory militia which requires orders to mobilize. It's like a private military contractor.
It's the same with merchant guild. It is formed to protect the interests of the merchants and regulate the market. Technically, the lord can simply make arrangements with another county and purchase things in bulk, which is a form of economic interventionism. But with a merchant guild, the lord does not deal directly in trade, individual merchants deal in trade in a way that profits them. So apart from the import-export tariffs, merchant guilds allow a more free market type of economy, with certain levels of protectionism depending on the lord's whims.
