Text Editor: How to change the spacing between lines? (Semi-Solution: Shift+Enter)

Edit: Edited because while Shift + Enter works for some scenarios there's still moments where I can't seemingly do anything about big gaps/spaces being added in between lines, tables, or what not.

Every time I press the enter key (enter new line/return/whatever) the gap is so big it feels like an entire line is being skipped over.

Unlike here, on the forum, where I can just continue to write right below with a relatively small gap (though on the flip side I don't know how to increase the gap other than to add empty lines in between...)

Actually, I've still found a few occasion where I'm having a problem with the spacing

For example when making lists, if the previous line isn't also a list then a gap will be created, it even happens here on the forum as well:

  • line 2

  • line 1
    • line 2

Then I'm having some issues with tables, for whatever reason the text inside seem to never want to be near the edges if I ever click on anything, but if I just write a sentence without touching anything the text can still stick to the edges/the cell borders can still almost touch the text.

Edit: Actually while example 2 looks like the above in the text editor, when previewing it actually looks like this instead (ignoring the dot ofc):

And like I mentioned, I can sort of get around it with one-liners, since so long as I don't click on anything or enter a new line it stays like the first table above, but as soon as I do anything, even if I remove the other lines, it will remain as the 2nd table.

That also makes any table with more than one cell pretty messed up and I'm having problems with tables and cells in general (especially if I've merged cells, since there doesn't appear to be a way to line up text as you want on different rows and columns independently), admittedly I'm still restricted by the columns and rows even with google spreadsheet, but anything there can be worked around by just making smaller cells and then merging them.
