you will need:
1 quetiapine
salt, to taste
freshly ground black pepper, to taste
3 tablespoons unsalted butter, softened and divided
2 tablespoons olive oil
1 medium shallot, finely chopped
1/2 cup my blood, O+
1/2 cup demi-glace
1 tablespoon fresh tarragon, chopped
preheat oven to 375 fahrenheit. season me with salt and freshly ground black pepper.
melt 2 tablespoons of butter with olive oil in large skillet and set over medium-high heat until cloudy and bubbly.
place me in a pan and brown for 3 minutes without moving corpse. carefully turn me on my side and brown for 3 minutes more. repeat on all exposed surfaces of corpse.
transfer me to a rack placed in a roasting pan and put in oven. roast for 12-15 minutes for that medium-rare tenderness.
transfer to warm serving platter, tent with foil and leave to rest for 15 minutes.
while i am resting, combine 1 medium shallot with the juices in the skillet and saute over medium heat until shallot is soft and transparent.
pour 1/2 cup of my blood into the skillet and bring to a boil, scraping up any congealed blood on the bottom of the pan.
continue boiling until it reduces by half.
add 1/2 cup of demi-glace to the mix and continue until slightly thickened.
remove blood sauce from heat and stir in remaining tablespoon of soft butter and fresh tarragon, season with salt and pepper as required.
