One of my favorites may or may not count - Blue Core - the main char is technically a dungeon core, but they form a strong bond with a female foxkin, who acts as a 'secondary main char' and the primary way they interact with the world. Pretty good fantasy story, IMO.
Modern world gets changed and people start turning into mythical beings in The Oscillation with the main char becoming a doombunnygirl. Technically a lunar hare, but close enough given what she does. Includes several other great characters, and is one of my highest recommendations even if I personally don't like it the most, the quality is amazing. Same author as A Tail's Misfortune and Pokesync.
My favorite one, A Tail's Misfortune gets rather slow updates and can be rather depressing at times, but is very high quality. Main char thought she was human but was actually a kitsune founder (founders can basically be considered demigods) who shouldn't be able to exist, and has to learn about and grow into her new position. Modern world, but hidden mythological beings (who ended up not so hidden in some cases) with heavy emphasis on character development, spiritual interactions, etc. Cannot recommend it enough, though the slow update speed is a bit annoying. Same author as The Oscillation and Pokesync.
Don't care much for this one, but it is very well done and I highly recommend it. Pokemon mixed with concepts similar to those in cultivation novels. Pokesync starts off with a hell of a lot of dialog and worldbuilding, which many people dislike, but if you want to understand everything, all the information you need is there. If you want to get to the more interesting stuff, skip to chapter 3. Same author as The Oscillation and A Tail's Misfortune.
There is also Azarinth Healer if you want a fantasy world with an overpowered healer-monk of doom. First 10ish chapters are utter trash IMO, I actually dropped it before later finding links to newer chapters and getting stuck reading for like 50 chapters before going back to the start to read properly. Gets pretty good later on despite the rough start.
If you like vampires, I highly recommend A Journey of Black and Red which is based on our world combined with our mythology, including vampires, mages, wendigo, werewolves, etc.
For more mage stuff, there is Skyclad and its continuation, Skybound where the main char trades being able to use clothing or tools in exchange for significant magical power. Despite how it may sound, it isn't intended as a sexual story, it just brings it up and some of the problems it leads to. That said, it does also include a succubus side character. And an engineer who may fit well too.
Fantasy world, main char ends up as a shoggoth who takes the form of a female and ends up with a female harem while forcing an industrial revolution on the world: Isekai’d Shoggoth does have a pretty slow update speed at the moment, unfortunately.
Lets Explore and Enjoy has very slow updates, and the main char is stupidly overpowered, but it is fairly amusing in my opinion. There are multiple characters that enjoy time in the spotlight, with the main character being an isekai that combined every DnD character the person had ever played into one ungodly powerful kitsune. Another character is a 'relatively normal' catgirl. Lots of lewdity involved on all sides of the story. Very slow update speed.
Hopefully some of these sound interesting to you and might be enjoyable. Personally, I think the best bets would be The Oscillation and A Journey of Black and Red
