And if they choose to not know, would they know that they selected to not know of that info?

Omniscience does not imply any particular ability beyond that, so unless the just know of means theoretically available to anyone, why would they?

Knowing doesn't mean being able to.
Could someone else figure out the way to limit awareness?
If not, neither could the all-knowing.
They also know of any way their future self might try to circumvent the restriction, so if its generally possible, they could.

Yes.
Omniscience is a trivial thing. On one hand it is a world breaking power of infinite information. On other hand it's something everybody has and could has and is akin to a curse.
If an omniscience couldn't be controlled your brain wouldn't be able to conceive all of that information and you will break.
If an omniscience is used subconsciously you will get some random knowledge and one day break.
If an omniscience could be fully controlled then the feeling of power will wash upon you. But. That feeling wouldn't last long as the one follows are loneliness, hopelessness, and strayed. And so one day you will break.

But disregarding all of that in fiction omniscience SHOULD be allowed to be controlled but that's just preference to the author I guess.

It all depends on what you decide. In the world of fiction anything goes, the importance is in how you establish your rules, maintaining their consistency, and ensuring the audience understands those rules.


In your case, if you clearly communicate that your character can know everything but some certain things, then I think that would be sufficient. As long as you maintain consistency it will work.
