I remember reading a manga that was somewhat older, don't remember the name. It's about a female immortal searching for, I think, her father, and the story starts as she inherits the money from one of the people she knew after staying on an island for quiet a while, she was posing as his child and I remember one scene at the start of the story where she is driving a car and gets 'killed' by a hitman hired by a wife of the wealthy dead guy to get all of the money back, before she revives and the story goes on.

Any names at all of characters?

it's been like 10+ years since I read it, I'm already amazed that I remember anything of it. I'm pretty sure that after she sorts the inheritance out, she moves to Korea and has a roommate that slowly realizes that she is older than she looks.

The only one I remember that is even remotely close is Memories of Emanon. But I know it's absolutely not it.

You could ask r/whatsthatbook or other subforums on Reddit. They helped me find Hole in the Wall by Tevin Hansen!
From a quick query to ChatGPT, Aion is the closest thing it found. But it probably isn't it.

I tried "Give me a list of all manga that features an immortal woman" and AI laughed at me. =P

I did "Okay, this guy wants to find an old manga. Here is his post: [copy-pasted]. Can you find anything?"
I mean, it certainly sounds fun, but the description is just too vague. I mean, if there was a character name, or an island name, or a family name, something with a personal noun...

I found it, went into baka updates and searched under drama and mystery with immortality tag. The name is Seol Hui.

"An old man dies, leaving a large percent of his vast fortune to mysterious girl, Alisa, who has supposedly been abandoned on an island for her entire life. The old man's death becomes Alisa's ticket back into civilization. But as she meets the old man's scheming relatives they begin to wonder if she is much more than a naive country bumpkin. What are her true goals? And who is she really...."

what's hilarious is how close this was to your description. *^^*
