Because gender is your identity and it is wrong to not respect someone's sense of self or identity, imo
People have different boundaries. Some people are easily offended if you get their gender wrong, others do not. Do not impose your own boundaries into others. If someone wants to be addressed as a specific pronoun, they will let it be known. Else, act within your own limits and do not try to act as someone's better! That is actually disrespectful towards others. You know not whether they desire to have their sex or gender known, after all!

i'd rather be wrong and be corrected than disregard someone

Sorry, I won't make the mistake. Not sure how I missed the reply.

It was in the SHHS fanfic thread; currently buried under loads of pages, so finding it would be difficult.
