As I’m sure you guys know Chinese names are usually written with the last name coming first, well I just realized that I’ve been writing one of my characters name with the first name coming first since chapter one…

Technically, his name should be written as Luo Jie, but I’ve been writing it as Jie Luo… he’s the only character I have written in this format, but now I’m torn. Should I go back and fix it or just continue writing it the way I’ve been doing at this point?

It's fine. If the Majority of your characters have non-Chinese names It's okay to name their first names first. If however it would be a Chinese or maybe cultivation setting you should change it.
Its a Xianxia novel and they all have Chinese names ?

Ah last names first. I have a Chinese name, should really remember that.
China, Japan, the Koreas, Vietnam - Family is more important so comes before the individual.
Most of the rest of the world: The person comes first and family is just a tag to differentiate one John from another, so comes last.
