I know that some manga are originated from novel, but mostly at those manga,I saw how in the fighting scene, they often switched pov between the protagonist and the enemy,my question how did they do it?

No, the their novelist did it in 1st pov ,but I don't know how they did it.
Usually its something like
--- (name) POV ---

Though switching character POV isn't for me
I just can't stand using 1st person for anything but the mc, even when I feel like I need to use 1st for other characters to detail their thoughts well enough.
I end up just using 3rd person for anyone else and then it's difficult to depict their exact thoughts.

Well, if the novel is in the first person, it must be something that the protagonist is watching. So he could either describe what the enemy is doing while he studies him, or he could tell what the enemy is doing while he does his own thing. The MC could even tell what he thinks the enemy is thinking, or if he is telling a story that happened in the past what were the thoughts of the enemy if later he had the chance to ask him, but it is all you can do in 1st person. Another possibility is using different POVs in the novel, and telling the same chapter, or the same scene from the different POVs, but it could end up messy.

1. Use an Omniscient viewer,
2. Describe everything using the thoughts one of the fighters
3. Do what you feel right... Make the characters speak as they fight, using the action tags to describe their actions. As long as it is not a mess, people would get it, just follow the rule one character per paragraph.

I generally write it from 3rd person POV to avoid immersion break. Switching POVs during battle isn't really good in my point of view.

This is something much easier to do in a visual medium (manga, anime, film) than a purely verbal one. The writer is already either in the head of one character or an omniscient viewer, and sharing their perspective with the reader. Moving into another head is like jumping tracks on a train car - it may work, it may even work better, but most of the time it will lead to more trouble than its worth.

If you're writing a scene between the protagonist and an enemy, it usually isn't a great idea to switch povs. In the situation that the povs you want to switch are pertaining to different areas of the combat, then it should be executed like so. But if you want to do that mid scene then whoever the enemy is has to be important enough to where their inner thoughts actually effect the plot in any way.

If all you want is the pov switch to indicate how impressive the mc is then that could be displayed in so many better ways. Yet if the enemy is like Sukuna and you do decide to do a pov switch, you can't write the same scene in another perspective. There has to be something new and relevant that drives your writing forward.

I'm sorry I couldn't explain it better. It's 6am and I'm actually just brain dead. Some examples for you is just slowly go over the manga panels you see that do the pov switch. Really examine how it is executed and see if you can translate that into words. Whether it be through a scene break or chapter switch, it's not impossible. SO GL <<

This.

It generally is a bad idea to write like this. People call it "head hopping"
