Besides chemical or drug attacks and electricity, maybe simple explosive pressure will do the trick?
Perhaps a virus could also come into play, though that would be less immediate action, The virus could either be biological or electronic?
Exploiting the Slime Girl's Weaknesses Guide Version #1:
1.) Can only crawl. Obviously, this is when she is in slime form.
2.) When shapeshifting, she becomes very fragile because of density issues.
3.) Slimes don't have gender, yet she chose to have it, so give her a menstrual cycle.
4.) It appears that your slime doesn't have electricity immunity so give her electric weakness.
5.) She doesn't have a core, meaning she lacks the obvious weakness from blunt damage or physical weapons. However, in exchange, she will have skill issues. Every skill she can possibly learn requires her ten times the experience as that of others.
6.) Cores for Slimes act as their heart, brain, and nucleus. Without it, your slime was basically a symbiote with no weakness over flames. It was possible to make your slime weak to supersonic waves which was reasonable considering her biological makeup. If your slime isn't a biological creature and more of a magical creature, the supersonic countermeasure might not work.
7.) If supersonic doesn't work, I am pretty sure psychic damage would do just fine, or voodoo magic which curses the opponent.
8.) Also give them satiety levels that they easily get hungry, and need to eat a lot given that they don't even have a stomach to store their food, and digest it on time.
Without taking account of the Slime Girl's Offensive abilities, I have several methods to deal with her.
1.) Put her into an impenetrable pure golden vault. It has to be gold so it doesn't rust. Then bury her as deep as possible.
2.) Dump her in a well. Better, dump her in an ocean, something deep like the Marianas trench. Considering our slime's density, she would be as good as dead after thousands of years by becoming a sediment.
3.) Strap her into a rocket or use teleportation magic on her to send her into space. If the outer space won't kill her, the aliens would.
4.) Use Psychic magic on the slime. Anything intelligent, and has thoughts would indefinitely can be targeted by psychic abilities. Slimes aren't really known for their willpower, so a good psychic blast would spell the slime's death as well.
5.) Douse her in a good lot of acid, and your slime will be as good as dead (Except if your slime is the Acidic Type). A better alternative to dousing slimes with acid was feeding them to a magical creature with a monstrously strong appetite, and unbelievably incredible digestive system.
6.) A weird way to guarantee a slime's death is to stop them from feeding. They have strong vitality, but parallel to this was their strong appetite. A starved slime will ultimately die. To guarantee it further, you can send the slime to a vacuum... or maybe a black hole.
7.) The Slime Girl was nigh unkillable, but I believed a polymorph spell could easily deal with her. Turn her into a lamb, and slaughter her. This was the easiest method, but clearly too OP it was difficult to be satisfactory for most readers.
8.) Finally, the hardest, but the most fun method was to give the slime too much aphrodisiac. They had no poison immunity, so the aphrodisiac would be very effective. Since they were asexual, I reckon the slime would die inevitably because of losing too much vitality from too much reproduction.
9.) Use curse-related or dark magic such as drain touch. Anything that directly drained lifeforce was a good counter to slime with strong elemental immunity.
10.) The easier easiest way to defeat a slime was definitely through giving them a lethal dose of laxative. They sure don't shit, but what if?
Slimes are one of the strongest monsters ever created, so I'm not surprised you're having this issue. The ability to control and rearrange their body is Terminator style OP. Add on an acidic composition or elemental immunities, and it becomes both highly durable and extremely dangerous.
Many chemical and viral attacks will not work on a slime.
The reason those are effective on humans is because they are directly damaging to human physiology, either by disrupting internal chemical and biological reactions or creating new ones.
This means that certain chemicals could still be effective, but they may have entirely different effects. (The classic example would be giving coffee to spiders.)
How effective these sorts of attacks are will depend on the slime's composition.
Is it pure water and water mana?
Is it a living, multicellular being; or a super large single celled organism?
Is it a solution of water and other life giving substances without any technically 'living' components?
Each composition will have different strengths and weaknesses, chemically speaking.
For example, a cellular organism would be destroyed by distilled water as its organelles attempted to defuse out of the solute dense cells and into the pure water. In that case, while she might be fine in an ocean or swimming pool, pure water could be an effective toxin for her.
One type of chemical that is likely to work no matter what composition you use is extremely strong bases. Especially if it's an acid type slime, but even if it's not. Lye and bleach are very common and highly corrosive. They'll make very effective poisons for any lifeform.
For my vote, I agree with using sonic, lightning, flame/heat, frost, and explosive weaponry.
Anything that destabilizes the bonds between her (cells/solutions/atoms) parts would nullify her main advantage. Separate and destroy her component parts, and she'll either lose control of them or outright die.
Melee weapons (that aren't elemental magic items) will not work.
Bullets will barely harm her(though the sheer quantity may override her regeneration).
However, a gun fired at close range might still destabilize her cells and cause her to fall apart temporarily. It may damage her cells permanently depending on her composition.
But it would definitely be better to use a grenade or other explosive. Slime rain...
Even if she won't freeze in most weather, using frost magic should still be highly effective as well. The cold can cause cell death far more efficiently than pure water. At worst, you can freeze the air or water around her and encase her in a block of ice.
Someone mentioned Psychic damage, and that should be highly effective as well if it exists and the slime is intelligent (it is). If it doesn't exist, then whatever magic changed her from a human into a slime should work.
Soul, spirit, astral, ethereal, whatever. As long as it targets the non-physical components of a person, your slime should still be vulnerable. Don't play her game.
In short, she'll be just as vulnerable to modern combat techniques as any other soldier. You'll just need to make sure the enemy recognizes her resistances to piercing, slashing and bludgeoning attacks.
Now if she were a metal slime, that would be different...

My novel has a lot of action scenes and battles. So I need them to be entertaining and tense. And most importantly, with repercussions, so that the readers are afraid of what might happen to the protagonists.
My problem is that a character I introduced is a slime girl, she is quite important to the story and I wanted to do something a little different, but now I think I overdid it and made her OP without wanting to.
Basically, the slime girl does not evaporate in the heat, or freeze into ice cubes in the cold, does not dilute in water and does not use a core, although it helps to have the shape of a girl (something like training wheels). at least in normal circumstances, those that a human would endure. If it falls into a lava pit, well, I guess it doesn't matter what it was in the first place.
Now, in a battle, how would you try to beat her?
It can be wounded, but it is made of water, it would not have any repercussions, right?
If an arm is cut off, isn't she able to just put it back together and glue it again? can regenerate lost body parts basically
What things could be used against something that can simply come together again during a normal fight?
The setting of my story is modern military, trying to be as realistic as possible.
Magic can be used, but nothing super powerful like merlin destroying reality, it has to be subtle or simple, a fireball or a big spell requires a lot of materials and preparation. It prefers something scientific to something magical.
make osmosis her weakness if she is in an ambient without too much water she start to get weaker. like and desert or if people use things that can absorb and take the liquid out of the slime girl
another weakness how does she control her scatared parts? if i split her in half and contain the other half in a jar how does she control the other part? does she loses the rest of her body?
How about I throw a shit ton of salt at her? Water has some saturation point where it can't absorb anymore so that would be a huge hindrance. As for how, you can figure that out.

Almost any chemical or cleaning agent from a bigbox store. Honestly, just a box of Tide pods might do it. Or a can of powdered draino. Buckets of bleach or pool muratic acid. Bags of deicing salt.
Military - concussion or flashbang grenades to soften her up, then white phosphorus or thermite grenades. Maybe even just buckets of powdered aluminum, iron, or magnesium - light those up, then toss jerrycans of gasoline on the fire.
Given the description of the slime so far, it sounds like the slime-substance she's composed of is something like a non-flammable oil? If you want her to goto the ocean, she needs both immulnity to saltwater and particles (sand).
Some specific chemical or compound might be one way to go:
You could make her weak against strong, concentrated acids or alkalines. Stuff on either end of the ph scale.
Some form of hardening mixture, to turn slime into cement.
Electricity is worth a shot. It may/may not have an effect, but its worth considering.
Another option is just a lot of force. Explosives, grenades, or whacking her with a boat oar enough times.
I'm going to point out slimes don't actually exist. You can make whatever properties you want them to have.
As such, It's really your choice on whether the answer to these questions are yes or no.
If the slime has a form, that suggests some form of skeletion structure (skeletion as in, something to hold its shape) as such, if this skeleton structure is broken in some way, that would suggest some weakness there.
Another way to balance a slime might be to look at her offensive and movement capabilities. It makes sense for high defense to come at a cost, right? The downside is that having a slime with almost zero attack power might not be what you want action-wise.

I had the party defeat an army of slimes. I figured out that you have to define what a slime is. I decided they are either bacteria, fungi, or slime molds (which are a bit of both).
So in answer to your question? Soap. Bleach. And alcohol. All of this kills bacteria, fungi, or both. Basically, being too clean is poison. That said, being too grimy might get dirt particles stuck in their body, slowing them down.
i didn't read all the responses, so forgive me if this has already been said, but yall are really overthinking this. the real world equivalent to magic is electricity. and it's quite literally everywhere. OP said it's a modern military setting, so it wouldn't be a hassle to set up a shock trap of sorts. tasers are a dime a dozen for the military, so i'm sure most first world militaries wouldn't have any issues whatsoever getting their hands on a few.
I say electricity, because, if you haven't said EXACTLY what she is composed of (can't just be pure water, unless the water is somehow conscious), you could make it highly reactive to electricity. even if she is pure water, electricity splits the hydrogen and oxygen, forcing them apart into hydroxi-gas.
now, depending on the specifics of your world, it could,1 effectively kill her if left on her long enough, 2, weaken her temporarily by effectively shredding her molecules apart, or 3, make her even more overpowered if she can still control those split molecules.
