Gripping my plot attachment with white knuckles

I love coming up with plots and hopping around to do an insane amount of worldbuilding for said plots before actually writing them and then my brain stops having fun and I start the cycle all over again.

My story FWOAH has been the Longest I've ever been able to focus (*I say, ignoring the chapter I've not worked on for over four days*) on one plot and the way I've sort of been able to do it by writing down the bits and pieces of the fun plots my brain pops into my focus and just sorta shoving them into a shelf somewhere.

It works but occasionally I feel stifled by this process, even though I know that if I actually do try and follow through the Fun New Plot™ I will fumble both like a drunk clown juggling glass balls and end up with no functioning story whatsoever.
Anyone else have this problem or is it just another fun fact to add to my icebreakers?

Add it to the icebreakers. I don't actually think much about the plot before I start writing. Usually all world building and future plot points are done in my head, but I do get new ideas. I desperately want to make new stories, but I have promised myself to stick to one for now.
