that... seems really boring. Or maybe that's just my ADHD preventing me from enjoying something so mundane.

But it seems you'd need food and bathroom and water at least until you actually get to immortality.
Well, during evolution to immortality, the need for water, food, bathroom and sleep will slowly get wean out during the process as the person remains a statue.

like those rumors years ago about the mummified monk that was supposedly still showing a slow heart beat, despite being mummified for like, 500 years? Was always skeptical about it, but that rumor seems related.

That rumor is just a rumor.

Dude's dead.
I know. Like I said, I was skeptical at best. It made no scientific sense. that said... It seemed relevant. "Sit and meditate for eons on end until poof, you're a god." The dude was mummified in a meditating position, so it looked like he was meditating for eons.

Makes one think if his last moment was him actually believing that he is aacending via last bits of brain activity or falling into despair as he knows he is not.

don't listen to these people, the profound truth of the Great Dao is that there are only four realms in total:
Ant
Fellow Daoist
Senior
Main Character
Funnily enough, there is truly only 4 cultivation stage when it comes to Culti Realms.

Mortal - Your average person
Foundation Building - Laying the foundation for cultivation through meditation (mind refining), training the body (Body refining), circulating/regulating Qi (Postnatal Qi), and the Spirit (Awareness).
Houtian (1) - Refining Essence to birth Qi
Houtian (2) - Nourishing the Spirit using Qi
Xiantian (3) - Refining the Spirit into Emptiness
Xiantian (4) - Refining the Emptiness to merge with the Dao (You can try and attain Immortality here)
Lastly, the highest stage.
Dao - Literal Transcendence, sometimes known as True Godhood or whatnot.
Acktually.

Skin
Meat/ Muscle
Tendon/ Sinew
Bone + Marrow
Blood
Organs

Six stages. Give or take.

Till date I don't understand why Skin is included in the big four (Skin, Meat, Bone, Blood)?
Can't forget the 5 Viscera heh. Usually after all that though the person begins to cultivate the Spirit (In Wuxia) and after cultivating the spirit, they transcend the 9 or whatever heavenly tribulations and become a "True" Immortal, or a Human Immortal if you will.
Btw, for Immortal Stages (And if you have seen my reply above, yes, Refining Emptiness to Merge with the Dao encompasses all these realms)

Human Immortal - Newbies, this stage is sometimes known as the "Loose" Immortal Stage or the Quasi-Immortal Stage.

Earthly Immortal - Woohoo, you made it! Now you are a bigger fish in a small pond. After relentlessly cultivating the Dao, you begin to shed your mortality and transcend the physical form, entering the Spiritual Realm with your new Pure Spiritual Body.

Spirit Immortal - A Transitioning stage, now that you are here, welcome as the Overlord of the small pond, nothing in the Vast ocean of Stars known as the Great Overarching Sky/36th Heaven/The Universe, but still, an Overlord here in your Galaxy/Solar System. Now, continue cultivating the Virtue of the Dao and gain enough value to become a Heavenly Immortal officially.

Heavenly Immortal - Congratulations, you are now a small fish in a vast, infinite Ocean of Stars. Be sure to realise the immensity of Heaven and Earth, though it might help you survive longer, and don't forget to continue cultivating the Dao.

Golden Immortal - A Peak Immortal, you can consider yourself as part of the big leagues, a Ruler in Heaven or a very mighty Great General if you ever decided to join the Heavenly Court and face against Demon Saints who's just gonna dunk on you like it's their normal Tuesday with their gargantuan stick they carry around all the time once they grow up.

Great Unity Golden Immortal / Supreme Unity Jade Immortal - A Taiyi or Great Unity Immortal, you have merged Yin and Yang as one and now hold sovereignty over creation. At this point, you're almost at the top level where the Heavenly Emperor and the Saints reside.

Grand Principle Golden Immortal - Woah, you made it? Welcome to your place as part of the players, you now dictate Heaven and Earth (Creation/Totality/The Universe) almost freely, as long as the other Daluo Golden Immortals lets you that is. You are considered as a Supreme God in this level, having attained the Dao but just not Transcendence yet. One can even say the Dao Ancestor is just a more accomplished Daluo Golden Immortal.

Dao Transcendence - You have attained Transcendence with the Dao and now exist beyond totality, you have returned to the Dao and is now the Dao itself and also part of it, you control Wuji, a Void containing infinite potential for any and all things, for from Wuji came Taiji (Duality).
