Fine. You are only writing in monster races from other lores because

1) you don't have an idea how to make one

or

2) you realized that species already existed with a given name after checking through sources

or

3) you have people who are super pissed because you chose to turn a Cthulu of Eldritch lores into a Satan from Bible or a Nymph into a Demon Just Because or for some reasons unexplained, without checking the sources and making the differences

Then your dilemas:
1) How to explain the origins of those creatures and how they have come to appear or evolve as they are according to original lores?
2) Differences from normal humans?
3) Differences from other species of same family / classification?
4) State their cultural origins

*Before answering, remove your anime and manga knowledges of Monster Musume and etc. and check the original sources for more details (excluding Youkai)

Since when did goblins have different races?
When people started churning out D&D, fairytales, supernatural or monster manga, folktale supernaturals.

Due to no specifics or name, they still call that "name" to generalize its species.
Mostly due to mistranslations, cultural violence, and fragmented inheritance from previous generations. A Japanese Oni or Kobold could be called "Goblins" even if they are NOT according to Koreans.

Very little differences mentioned or details just not found.

I can understand Korean but what's European?

And calling an Oni a Korean Goblin, and the like, seems unncessarily confusing. Just use the general term since they're all different versions of each other.

You should check out my world building. I give a very accurate portrayal of dullahans in accordance with their original lore (with a few in-world appropriate differences.) I don't think I have really EVER seen any form of media portray dullahans accurately. Not even The Legend of Sleepy Hollow, the earliest popular portrayal.

They are supposed to be messengers of impending death. The head they carry is supposed to bear a vague resemblance to the person they are delivering the news on, except that it is in a rotting state and has the appearance as though it is made of moldy cheese. And, they absolutely hate people looking at them and will attack anyone who does. So long as you do not look at them though, they will leave you alone.

Also, dullahans are not undead. They are fairies. I have seen a few rare sources at least get THAT one little part right.

As for Banchees... *shudders.* Ok, I actually HAVE seen EXACTLY 1 anime portray banchees accurately. An anime called "The Ancient Magus' Bride." Every single other person who has EVER portrayed banchees in popular media has them exactly the reverse of what they actually were.

They are guardian spirits who will become attached to a family and protect everyone under the same roof, kind of like a guardian angel. If the banchee is somehow unable to prevent a member of their family from dying, either someone dying away from their protection or they are on their deathbed due to an illness, the banchee will become overcome with grief and whale out their sorrow and anguish at the fact that the person they love and protect is dead or dying.

It is confusing, I agree, but that how people define it in ancient age vs. modern age.

And not many people recognize the differences in crreatures unless they get it from an anime, Tv dramas, manga, or visual medias that get famous for something.

The problem is how do you identify them?

If Dullahan are not ghost riders, but fairies. Then how did they end being headless? Are their bodies similar to Anthrophophagi or Ewaipanoma, face on headless human body?

I also heard that Dullahan used to be ancient Celtic God that got demonized by religious conversion.

Their veins, nerves, bones, organs, protein shapes, and muscles have created natural magic formations. Eventually creatures learned how to cultivate. When this happened, strong individuals were able to fuse Mana, Qi, and the Elements into their bloodlines. Allowing descendants to use unique magic. They were also able to create rune imprints on the souls of their descendants, to create a path forward for them.

Creatures like humans, dwarfs, giants, elves, goblins, and gnomes come from a common ancestor.
Humans, like goblins, are able to live easily almost anywhere. They have short lives compared to the others, with only goblins living shorter lives. Thusly, humans, more than the others, tend to create new things to help themselves survive. They were the first to write, and they create deep fields of study. Only dwarfs and gnomes are comparable in these fields.

Dwarfs, humans, gnomes, and goblins have two subspecies. The main two are those who live on the surface and those underground.

Merfolk are an example of convergent evolution, they are intelligent but have extremely short lives. Few are able to cultivate enough to extend their lives.

Elves are highly specialized to live in forests.

Dwarfs due to living in environments with less recourses, have become shorter. They are extremely similar to humans and gnomes. They tend to experiment to create new tools.

Gnomes due to living in an area with few predators, and little competition shrunk. They live underground, and they see the elements, Mana, and Qi, instead of light due to living underground.

Giants when not by themselves live in groups of 2-7. They have an exceptional ability to manipulate both Qi and Mana, and live long lives.

Goblins have very short lives, they can hardly use magic, but can create weapons. They tend to quickly build, and then quickly abandon cities. They have naturally born leaders, hobgoblins, who seem to have been born to use mana.

I think it is, but at the same time, they make all the male versions muscular as FUCK, with literal steroid level of GAINS.

Not really. There's the lanky human-like handsome goblins. It's usually when the MC reincarnates as a goblin, and the author doesn't want him to be exceptionally ugly. Yet despite being a short, green human, goblins are still depicted as vermin that should be eradicated.

I actually haven't seen much about the origin of monsters. Either that or I usually skip them since, almost always, they add nothing to the story.

There's this world I made that is essentially an urban fantasy world where all the fantasy creatures reside in modern cities and goblins (and by extension, orcs and ogres) are in the same level of citizenship but discriminates via contrasting value.

Humans are seen by the others as weak and individualistic grubbers but very organized.

Goblins are seen by others to be EXCEPTIONALLY weak and untrustworthy but they have unity like no other.

Orcs and ogres are essentially the same. They're seen as strong ass people with a weak ass brain. They're basically the people that really don't belong in the modern age aside from sports and entertainment.

Of course, there are outliers in every species, like the dumb strong hooman, the goblin raised in a suburban neighborhood, and the ogre with the highest GPA in his Foundation Studies class.

What I found out through this world building experiment is that specieist discrimination REALLY WORKS and pops out when you put them all in the same level and under protection of an umbrella of law and justice. Back then, it's kill on sight. Now, you gotta find other ways to fuck with the other dudes

Of course it works. As long as there is the slightest of differences, discrimination should always be present. For example: the demi-humans. They're all vastly different from each other. I've thought about making the feline races supremacists (rightfully so imo), but unfortunately I was already a bit far into my book; they'll have to appear as a minor group.

my idea is more on that since shit like slavery or murder is off the table, the species would find more ways to discriminate one another. like how people would portray black people with black face and watermelon, while the Chinese get the slit eye, rolling Ls treatment, but in a fantastical setting, where instead of white people doing black face, orcs are doing it too, and with far greater results (to their own detriment).

take each race's facial features and exaggerate them. you could also increase the difficulty by taking inspiration from real life. ex: all orcs are brown, goblins happen to love money, etc.
