Probably because of the femme fatale trope and the fact that the cloak is easily imagined as tightly hugging the body in a lewd way. And for handsome, Death is often the peak of strength in anime, so they give the-now-him an Adonis body to represent that strength.
Personally, I prefer the Soul Eater version.
