Isekai LitRPG with Smut.

Isekai coz it has an established formula on how to write your work. LitRPG coz you can quantify your MC's skills, instead of showing his power and learning curve by actions. And, smut, coz sex sells...and this is ScribbleHub (SmutHub).

Depend on you mostly, if you're fan of comedy then you'll have an easier time writing, or horror need the style, sci-fi just need not too many inexplicable BS tool/weapon and tragedy...well...
In part but you can use a simple scheme called the Mc op but underestimated, something like this:
"Hey who's that?" Mob #1
"oh he's the trash that came from the lower sect, the lower continent, the lower realm, plus he has the lowest spiritual talent in the sect, worthless trash" mob #2
*Mc proceeds to use the 3-Legged Black Mutant Dragon's 9 Forbidden Techniques*
It burn my braincell more rapidly than reading MTL under the sun in the sahara.

Write a short story to get you started. But, yeah, slice of life. Because with a slice of life tag you can excuse a plotless, unfocused, amateur story.

Mind you, a good slice of life is focused. But it's the genre easiest to have an MC meander around in.

Can’t choose. Everything is easy if you‘ve read from every genre. That said, if you don’t read—or watch—shit, you’ll have a hard time writing something.

The answer to your question is: everything is easy, if you’ve read from every genre; nothing is easy, if you haven’t read anything; in conclusion, read a lot and then start writing.

None of those either really. Maybe techniques but otherwise...nah.

Sci-fi. Throw everything at a wall and make sure to never do the cardinal sin of explaining how things work. And you're golden.

The whole point of Sci-Fi is to explain how things work... It's not Sci-Fi otherwise, it's just Fantasy...

I'll add since a lot of people keep saying smut/romance, that that's one of the harder genres for the same reason that comedy is. There's a reason everyone talks about bad smut or crappy romance ruining stories. People have very high standards for it. Unreasonably high. Not to mention everyone has different tastes for what's good or bad. So if you do start out with it, you'll get a lot of flak right out the gate unless you just never share it. And then how are you supposed to improve?

Lets go down the options.
Romance: You need to have enough knowledge and self-awareness to not make a toxic relationship, then glorify it.

horror: The second worst option, because you have to be descriptive when it counts, while holding back enough information to keep the idea of the unknown.

tragedy: The absolute worst option to start writing since you got to pace out the tragedy well, then make the downfall believable and drastic. A lot of foresight needs to be used with this genre.

xianxia: Don't know much about genre, so I can't add anything to this.

sci-fi: Sci-fi is a pretty good starting point. You just need to vaguely explain the futuristic mechanics and that'll be it. As long as you have an interesting plot, and a creative mind for possible futuristic machinery, this is a good choice.

Slice of life: The best starting choice, not because its easy, but because its safe. The reason why I say it isn't easy is because outside of possible smut, you have to keep your audience reading with little to no plot. But its a good place to start out if you want a rather safer option.

comedy: The third worst option. First off, you gotta be funny. Second, you gotta translate your jokes to text. You can't just say someone makes a funny face and expect that to be comedy. There needs to be some cleverness in the delivery, set-up, and execution.
The whole point of Sci-Fi is to explain how things work... It's not Sci-Fi otherwise, it's just Fantasy...

Fantasy isn't fantasy because nothings explained. Fantasy is fantasy because its set in a world unlike ours, and normally with supernatural and magical elements. You have to explain magic in fantasy for instance. Sci-fi is the same as fantasy, just that its set in our world in the distant future. Or you could do a star wars move and make a sci-fi/fantasy.

not sure if it's the easiest, but you can try fanfiction if you're into a fandom or so. the genre can be anything you want, as long you love the source material.

as opposed to starting with original fiction, with fanfictions you pretty much just change things a bit from an established franchise while figuring out what works with you or not.

Tragedy is easiest
They meet.
They died.

There, tragedy. Okay, on a serious note...

There are no easy genres, just the easiest among them.

Romance is difficult if you have no experience in romance. A slice of life is easy to write, but a good slice of life is not easy to write. I mean, how are you going to make a daily life story interesting to the readers that they probably experienced as well.

Xianxia and Isekai are templates, and yeah, it's so easy to copy-paste, but if you're planning to make a good one, mind that they are oversaturated. There are so many novels of said genres you might have difficulty differentiating yours compared to others.

As there are no easy genres, I know the hardest one - Comedy. There are different styles of making a joke and it is guaranteed not everyone will laugh. It's subjective and you gotta be creative in making one.

The next hardest one is psychological. You gotta immerse yourself into the ill minds of your characters without becoming one yourself. It is also hard to portray the mind of a character without tripping over the narrative, misunderstanding it as simply 'edgy'.

The third hardest one is historical. Good luck writing one without being corrected in the comment section, ruining the story for other readers. At the same time, 100% Historical accuracy is impossible.

Okay, too much text. The point is that there is no easy genres. Just hard ones.
