Cowboys were farmers.
Ninjas were farmers.
Both are symbols of rebellion.
Both have weapon perks.
Both existed around the same time.
Depends on whether you like wide-brimmed hats and guns or balaclava and swords.

Personally, I would go want the ninjas to have guns but since I can't pick that, cowboys.

Also, this thread has nothing on cowboys or ninjas. Not even a link to your novel.

Tending to cattle is a job type for farmers.
In an enclosed area, yes, as farming is tending an area of land that is devoted primarily to agricultural processes with the primary objective of producing food and other crops. I'm not sure if free-range grazing on wild plants counts, as you're not tending a specific area and are being more of a pastoral/shepherd role.

That's more "ranching" - which includes farming and animal husbandry. Cowboys included those who just rode the range in cattle drives, as well as those who ran farms, and those who just bred the cattle. Many cowboys were also farmers, as the income was more modest but also more consistent than going on dangerous cattle drives or taking risks at the markets.

I still think those are all part of farming, whether animals or plants or in an open area or enclosed. Though I understand the difference between cattle driving, shepherding, planting, and breeding cattle, all are part of the FFA and 4H courses on farming in the Midwest and west so I personally believed it is more of an umbrella job title. I am probably wrong though by definition.

If you're from the Midwest, then you might possibly be half right about the West.

mid=half.

I'll see myself out.

Well... the "half-right" pun was actually pretty accurate in this case. They have BECOME part of the umbrella of what 4F goes into, but historically they were distinct and separate.
In fact, there was (at least one) episode of Rawhide that kind of went into this divide, with the "sod busters" (farmers) and the ranchers in a town feuding over something (probably water rights but I was working from home and only half paying attention to the TV in the background)

Aye, I'm thinking of writing a story in the 1970's where Dungeons, magic items, and mythical beasts are normal. Jim Crow is gone, but there is still discrimination. My MC has a grimoire with a bunch of Ninja techniques.
