Content inside of table cells won't center align

Maybe I'm missing something simple, but no matter how many times I mess with the table properties on the site, I cannot rig the content inside of the cells to just center to the cell. Additionally, despite setting a table width, the final width of each cell keeps changing to match the amount of text inside, resulting in a total mess.
Please, someone, point me to the forum I think exists but can't find.
