I like reading enough unique descriptors that no characters look the same in my head, but not too descriptive because then my imagination just gets wonky.

At minimum, hair style/color and eye color. Body fitness, or features unique to that character are nice, whether that be an accessory or something like that. Animal parts or parts that are different from humans are also important if they have them.
Though, if the character being described is important and will be staying a while, whether they just be an adventuring companion or a love interest, being described more thoroughly in line with the interest of the MC makes sense to me.

Voice, posture, and gait are extremely important. Don't just describe body parts, describe them in motion. Perhaps an old veteran might limp, or a cloaked figure might have a surprisingly soft tone of voice. That fat noble has a jovial spring in his step revealing more exercise than his girth tries to suggest. People often overlook how much social and health information is contained in physical traits not strictly visual. As someone who is face blind, I read peoples emotions from these alone rather than rely on the face they try to wear.
