Classic Literature and.... Shakespeare.

Some classic lit have qualities that transcend subjective interpretation, that is why they are timeless, and worthy of study.

I think you should read the story known as "Around the World in Eighty Days" by Jules Verne.

Favorite dialogue in fantasy novels includes:
Tamsyn Muir (The Locked Tomb seires)
Gene Wolfe (Book of the New Sun, also in the Latro in the Mist books)
Katherine Addison aka Sarah Monette (Goblin Emperor)

They actually all have writing styles, especially in dialogue and action description, that are a little bit hard to follow. They're probably not the best for "new readers" just like Shakespeare wouldn't be. But if I read stuff that's too easy to follow, I get bored. Every reader is a little different and some audiences ("literary fantasy" readers etc) want something that makes their brain work a little more, just like some gamers want a higher difficulty setting
