Now that you mention it, some of the openings do not give off the vibe that they are openings for the show. The OSTs definitely feel like they were made for the anime.

Try reading the story known as The Lesbian Demon Lord Conquers the World. I would also recommend that you read the Witches of Floroma series.

I agree. Most of the stories that I have read do not really explore the themes that such stories can have in great detail, quickly resolving the protagonist's initial reactions to the changes that they undergo and then moving on to the main plot.
