If you're making mac and cheese, you might as well add some greens. And if you're adding greens, then you might as well make some meat to go along with mac and cheese.
What I'm trying to say is: make bolognese or carbonara sauce to go along with your pasta. Mac and cheese is the meal of the lazy.
Alice is right. Mac & Cheese is a side (you can add the main course/protein next to it); adding stuff to the mac and cheese is just unnecessary (and possibly overkill). It's one of those things you had to eat growing up. When settling the new continent, Italians had plain pasta and olive oil, the French had mac and cheese, and the Germans had buttered noodles.
