Most of the novels I see here seem to treat the gender bender aspect (if it's used) as just a thing that's pointed out and fascinated of at the start and then it's largely glossed over afterwards.

Does anyone know of some stories in which the gender bender is utilized as a primary plot point? Or well integrated into the story?

Read QuietValerie work here. She is the one that treat that subject the most seriously (at least in the novels I'm reading)

I would say my story to a very small degree, but I don't have enough chapters, and my character's a villain ...

This. Val is the undisputed queen of well treated and developed m>f trans stories.

Hm... ima list on whats stuck with me, they are all basicly dropped though ouside of Andurs fiction(finished), demon queen, vampire and the Chinese novel(finished):

Fox-girl Reincarnation (on RR):
mostly a good GB since a realistic mental shift due to reincarnating into another culture and MC adapting TO it. No MC trying to bend everything around him/her to our standarts. I actualy realy liked this!

The Reincarnated Vampire Just Wants To Enjoy Her New Life:
Hm.. yeah not realy the focus but atleast its an reoccurring theme MC broods over.

The Hollow:
More like Psychopathic MC dealing with his new life, might be worth to look into it though.

Ryn of Avonside:
That one is not some IN YOUR FACE agenda parading. Just an MC being realy happy about being female. Romance takes ages though :.

I Didn’t Ask To Be The Demon Queen!:
Another MC being happy in her new life i guess.

Roots (18+):
Left me with an impression of relateble and realistic behaving Characters, im a sucker for a more down to earth story telling approuch.

Reset:
About a Demon who gets GBed, gender propably plays a role in him getting more emotional and closer to others.

Reborn as My Love Rival’s Wife:
Guy turns into a girl that is “trapped“ in an contracted fake marriage. We go deep into BEING an (awkward) woman territory and everything that comes with it. Chinese novel though.

Crashed into Fantasy (on RR)
Worth a read even if GB not the main focus.

From Andurs Fiction Series:
Body and Soul (on RR):
Eh.. not strictly GB? It will make sense if you read other Stories in the Series. ML(here hes female), FL and their child are soul bound and Reincarnate together and its basicly about how they expierience an in itself contained story in a Multiverse. All stories are losely linked together in an overarching plot, though they all can be read on their own. They follow the same basic plotline in different settings, sometimes closely linked to another story and more often than not, well not. There is a recommended order to read them all to make sense of the overarching plotline but its not that important outside of like 4 stories that run back to back with each other.

Well... outside of these i dont realy recall a GB that realy stuck with me.
If you are searching for some story handling stuff like love, period, pregnancy and motherhood or anything similiar, give up. They all play it save with pg13 girls love or gender not playing a role whatsoever.
There is like only that one Chinese Novel that handles stuff like this (and that atleast decently aswell). Nobody else even tries to touch subjects like motherhood with a 10 ft long pole though. Only the previous mentioned Vampire story above does a passing mention on pregnancy in dismissing the notion as a solution to a relevant plot line.

@Muramasa I would give "Falling in love with the first king" in SH a try, it is pretty slow, but still have a lot of development that involve the mc transitioning and seeing whether he/she conform to their role in society as a young woman. The start is a bit wonky, but I can say that the rest of it are a great read, I personally enjoy reading the age progression of William or rather Mirabelle from the start to whatever is current. The author updates regularly and overall it is a fun and slow read that really get you attach to the character and how they fare from day to day. This is my contribution to what you might be looking for and I honestly think this book is one of the few gems on this site that are great in both quality of writing and narrative.

You can also try out the transgender tag if you want a more serious treatment of this subject!
Most trans stuff has it as a primary focus since a lot of conflict comes from around that.
I recommend a lot of stuff from Taxouck her gender bender anthology is a collection of cute mostly mtf stories. My personal favourites being the dungepn of the mad king anthology.

I write mostly trans gender bender. Newly Not Cis is about a guy who gets genderbent but never actually becomes a girl in mind. And A Body For Someone Else is about a guy and girl swapping bodies and almost immwdiately choosing to not go back. It centers around them learning how to deal with their new bodies drama.
