Gender apocalypse could be interesting if its done right. But it could be a train wreck if done wrong.
It could have some potential. Well, I'm not sure if I'm seeing it the same way as you but a story where there's 1 main character to say 4,5, or 9 of the opposite sex those kinds of stories are very popular right now! (Is that what you meant by gender apocalypse?)
One of my stories has some undead themes also, although its not quite the same as how others are doing it, and its an android theme.
Not sure if it's the same but i've been thinking about a novel titled " Semen is a precious resource " something akin to " world of woman " as in, male birth rates are incredible low ( 1:500 ). World has a variety of species, not limited to Humans, elves, demi humans, dwarves etc etc.
Typical Isekai story, guy goes to a FwB from work (he works as a butcher), spends time there, has to go home but she insists in coming with, so they go together. He gets attacked by Truck-kun but thank to a timely warning he escapes death, truck-kun turns around, they start running, Truck-kun invites his cousins over (multiple trucks start chasing them) and in the end the girl pushing him aside and get overriden.
The shock of seeing her die creates a opening and soon enough, he follows after.
Typical trope: He meets a goddes that wants to reincarnate him into a world in which the male population is to hard in decline (mostly due to unnatural male deaths). Realizing that this was set up by some unnatural entity he gets pissed, long story short, the goddes (or god, take your pick) sends his FWB (Let's name her Amelia) along with him.
He wakes up into the body of a demi human, (feline) halfling, whose father was a orc. The body was in coma due to (tragic accident or smth) and he woke up, due to his awekening. Mana is a thing in this world (not everyone has it) but male's, by default awaken when they turn eighteen. (Male seed in this world isn't fertile without mana).
Anyway, long story short, the MC is a particularly interesting specimen because orcs are known for their generous seed quantities and vitality while demi humans are known for their fertility. Both demi humans and orcs have a lower male birth rate, (can make up a reason in regards to both feline and orcs rarely having mana, and thus a much more uncommon birth rate).
He finds himself in a world where societal norms are turned upside down, physical labour is considered a womans job while males, generally don't work (they get paid for seeding females) and if they work, it's usually as a actor, model, assistant or mascot.
Sex in it's enterity is seeing as a form of reproduction, not pleasure. Sexual education doesn't amount to much in this world, males are thought where to put it and how important it is to ejaculate vaginally, the quicker the better (stimulated to just finish bussines and move on, hopefully finding another partner in a longer timeframe opposed to spending the entire time/afternoon with a single female) - while females are thought how important it is to grab the chance when you get it - seed in general, not to mention impregnation is heavily fetishized due to cultural norms in this world. Females often carry a small bottle of lube to ensure that if they get a chance, they're ready to go (no preparation on the male part required), they're thought hte first time is always painful, it's just something you have to deal with.
So yeah, normal guy (normal values) comes in here and gets pushed into that. He doesn't want to be a glorified seed bag - to make things more complicated, Amelia was send after him and forced into the body of a male succubus (succubusses are a female only race in this world, so a incubus doesn't exist, meaning she's basically Futa). Male sucucbusses are beyond rare, they normally just die during childbirth (something with the mana being unstable, since succubusses are creatures that are always born with mana). So she to, has to suddenly face this world with upturned values, not to mention from a perspective as a male (everything that can produce seed and impregnate females is considered male by default in this world). - (Could add more drama here in regards of sexuality doubts/questions, with the MC not being sure how to handle the girl he, regularly made love to, suddenly having a dick)
From this point onwards i'm not totally sure, I was thinking that, either, the MC goes into the army (which obviously gets denied, with the whole 1:500 male birth rate) but the country he's born in, has a pretty strong male protection act, basically a law that's meant to protect male interest and prevent male supression in a society that's mostly matrachial ( This country has a king but all ministers / the ruling body is female, the only real power the king has, is that a law can only go into affect with his signature {basically the same thing we have here in the netherlands} )
There's also the Patriarchy which is a male supramacist country, The Federation which is a female supremacist country (extremist) which pretty much put all their females into camps, forced quata's, living conditions improve based on quantity of seed etc etc) - Elven nation of Lenoir - Dwarven republic of Midgard - Beastkin nation of (whatever)
So he basically uses a mixture of bribes, threats (going to the patriachy embassy to request extradiction due to female supression, or suing {Not that that will do much when the judges are female as well} to eventually get accepted into the army as a mage (basically Tanya the sage of evil vibes) and although he gets forced into backline/logistical work (safer) he does see combat when skirmishes between the Federation and Patriachy cross into their boders unexpectedly.
Either that, or he gets rejected and becomes a mercenary (basically a adventure) since gates are a thing (similarly to solo leveling) but with a different class/power lvl (no E-F- S etc ranks) Gates were privatized due to the enormous increase in jobs it creates (it's basically better for the economy) So the army only takes care of unpopular gates.
Something along those lines.
Amids all of this he has to deal with the fact he has a weekly/monthly quota of partners he must lay with (Sperm banks aren't a thing because the mana within seed quickly dissipates once outside the body, there are ways to lessen this affect but due to this general problem sperm banks never truly got invented {Research in this direction never really went far, same with sexual education} )
