My eyes have been open ever since I've been reading monster musume. I'm definitely going to take some inspiration from the monsters.

But me personally, Centaurs. They need to be more common

As for me… I want more dragon girls and foxgirls, without adding gender bender, girl's love, or smut.
And, please… no more arachnophobic arachne.

Centaurs are somewhat fun right up to the point that you realize just how much the horse part limits where they can go and what they can do.

Vampires.
When done right, a vampire can be quite hot, and yet, a monster.

Want something unique? Gotta think outside the box. Perhaps a kind of parasite that steals the body of others by non-physical means.

Most of the ones I like are rather common, though not always popular.

The rarest of the bunch is Alraunes or other plant girls, so more of those would be nice.

Asian Mythos: Nekomata & Yuki-Onna
European Mythos: Sidhe (A type of Fey for those who are unfamiliar) and Garou (origin of the pop-culture 'Werewolf' legends)

Is that some kind of duck-like creature?

Took me a minute to remember that I know of this creature, though I've seen and heard it pronounced and spelled as "Rougarou."
That'd be the French spelling if memory serves, but yeah. That's another way to refer to them. I'm not certain of the actual origin of the legends, or the linguistics involved, so I've stuck with the simpler 'Garou'.

Slime? Not really. But it is true for Lamia and Arachne, especially for Lamia. Poor sneks are underrepresented here.
Yuri sneks would be a nice addition too :3

Ooooooh, centaurs? My MC got a twin centaurs wives, bro! I'm planning on having them take dedicated page time on volume 4.

Aside from them, I wanna see more representation in the half-deer girls (like Jessica from Reverse:1999) and goat yokai (basically a normal woman with short goat horns and short tail). They have this incredibly elegant, wild aesthetic that usually gets ignored in favor of the more common cat/fox girls.

There's just so much cool cultural and biological stuff you can do with hooves, horns, and unique migration patterns instead of just giving them animal ears!
