So my fiction has a curse that causes reduction in size and function of certain organs. Is there any real-world medical complication that exhibits similar symptom?

There's Gigantism and the opposite in nature, so maybe just use that and slap "magical" or "cursed" and "organ" in front of it?

So there are disorders that you can be born with, leading to a smaller frame, but nothing that develops later in life and "robs" you of the height you've already gained. Matter can be displaced but not destroyed, so where would all the bones & meat go?

Hyperkyphosis, not reduction per se but it is an acquired disease later in age. It bends the spine forward so in a sense reducing their height.

But atrophy is more of a right answer here as it encompasses a broader spectrum of conditions that shrink organs. Careful drawing analogues to these though, they don't shrink proportionally like in ant-man or something.

Best would be to use atrophy, and keep away from naming any specific conditions therein.

Kyphosis causes the spine to bend forward, giving a hunchbacked appearance so the person would appear shorter.
