Every ally is equippable. You just need a high enough STR

Often, sentient weapons or armor don't have human forms, would that count for you too?

Life Hunter. Great story in general. Though saying that is kinda a spoiler cause it doesn't happen till later on, like at least half way i think. Not sure.

Recently they released the anime Record of Ragnarok. I don't know a book or, but my hubby was watching this, and it fits. Since you saw Soul Eater... But maybe it is a manga... Somewhere...
