Seafood sauce recipes

My kid asked for clams and crab legs for his birthday dinner. I've ordered pre-cooked, frozen clams and crab legs. Now I'm looking for advice on what to do with them. Something simple would be appreciated. Some kind of sauce we can serve on the side in case the kid doesn't like the sauce would be perfect. Butter-based is good but not required. Something we could put over rice and the seafood would be lovely.

How about doing a gravy? Tis butter-based.

Also, would be nice if the xlams and crab legs are fresh. Tis more flavorful if you turn those into stocks.

Any case, turning those frozen seafood into bisques can make them compatible with rice.

Make a stock and use it for demi-glace. It is simple enough that you can add flavoring for whatever he likes (like herbs). It also will work for rice, and you can also make soup from the unused stock.
Though, I am better with East Asian cuisine...

I prefer a garlic butter sauce for such. Especially if the seafood is steamed. So, why not just do a steam pot or a seafood boil?

  • ½ Cup Unsalted Butter - 1 Stick
  • 6-8 Garlic Cloves - Pressed or minced
  • Pinch of Sea Salt - Taste and add more as needed
  • 1 Tablespoon Fresh Lemon Juice

Optional​

  • Fresh Herbs - Dill, parsley, or chives.

Instructions​

  • Dice the butter into cubes. Add to a small pot with the salt and start warming over medium low heat. Bring to a gentle simmer. Keep the burner low. If too warm, the butter will start to burn.
  • Add in the minced or pressed garlic and stir to combine.
  • Simmer just until the garlic starts to smell fragrant. That should take only 30 seconds to 1 minute.
  • Remove from heat and add in the lemon juice. Mix everything well and transfer to a small dish

Note from me. Salted Butter also works. You would use way less salt to add for taste purposes. Recipe is for a serving for 4. But that is depending on how heavy or light handed your eaters are normally.
Oh, and white rice on the side would be workable with the Garlic Butter Sauce.
