I can think of several novels where poverty is used to varying degrees, either as part of the character's background or motivation, or a temporary circumstance, but one where it is a lasting, major theme is harder to think of.

Those are probably the closest two I know
Lament of the Slave - it's a slow-paced novel taking many chapters to get through a single day, but the MC is a runaway slave on her way to make enough money to live by, starting from practically nothing.
Hacking the Game Didn't Go as Intended - the MC is dealing with poverty up until chapter 30 or so, after that it makes a full turn into generic power fantasy.

Alchemitization on RR was the best I have ever read in this regard. Sadly discontinued (why are authors doing that to us?!!).

Magical arcana throne (early on?) same author from Lord of mysteries

Great Tang idyll (NU) (also btw is one of the very very very giga rare CN where author/MC bash on their gov openly, even could be considered traitor)
nevermind, not really poor poor, as despite the "conditions" of poverty around MC/FL (duo transmigration and the best one), they are not struggling for survival as their parents are kinda the "lord" of the village. But yeah, still kinda poor and they will find ways to get money. Also its a old series = quality stuff unlike nowadays slops.
