I'm currently wrighting a novel that has status boards and was wondering what to put into it to make it more interesting or to just give more information on what the stats are of the character?

Well, what stats do you already have in mind for the character?

Personally, I think at minimum you should already have some idea of what the system is yourself before even attempting to write a liteRPG story. If you don't know how the core system governing the power system in your world even works, then you are off to a very bad start in terms of the world building.

So, yeah. The exact mechanics of your status system is a core part of your world building, so it is a very bad sign if you are unsure about it at this stage.

If we are talking just on a theoretical level though, perhaps some discussion on this sort of thing is worth while in order to help form some ideas for a theoretical future story rather than one you're thinking of writing right now. If you are set on a liteRPG, I would recommend putting it off until you have a much firmer idea of what the system is and how it operates.

Just as the one above said, maybe try to read some litRPG novels that everyone knows to get a better grasp at system novels and how they interact with the world, the power system, and everything else. I would recomend some classics such as "I am a Spider so What?", "Arifureta", "Everyone Loves Large Chests", and so on. Some modern litRPG LN that i've liked lately are Hell Mode, this one shows a very in-depht litRPG system with a very smart mc that takes advantage of it

A bit of a note on the theoretical stuff I talked about earlier.

There is a very definite trade-off when it comes to stats and skills. The more skills you have in your world, the more frequently you can dish out the rewards in the forms of leveling up a stat, skill, or class level. However, this sort of thing will grow stale quickly, and readers will begin to detach from your system-based information and pay less attention as stats loose all meaning.

It is usually the case that having fewer stats and skills on the list makes each and every one more significant. You have less specificity in the stats, meaning a single stat will cover more areas, but every single point in every single stat will matter a lot more to your readers.

The standard I've noticed is that 3 to 5 stats seems to be the optimal range. 6 is still manageable, but as soon as you have 7 or more your readers will start to have their minds check out on the stats quickly.

For avoiding an over-saturation effect on skills, you should try to limit them to 10 or fewer for any given character. Exceeding this will produce a similar effect of readers mentally checking out on the skills and finding them meaningless due to the dilution effect.

Oh god, Ai-chan laughs so hard alone reading the word wrighting. Man, Ai-chan's eyes suddenly water in the middle of the night. Suddenly imagined the face of a dude trying to carve a status board out of wood to put into his novel, which wouldn't fit because the status board is bigger than the book.

Oh dear, had to spend a few minutes to recover.

Anyway, Ai-chan assumes that you're writing litRPG. It depends on what you want to tell the readers. In most cases, you do not need the entire status board. It will just make a mess. If the skills aren't necessary in that scene, just omit it. If the titles aren't necessary in that scene, omit it. Maybe your character has an increase in his strength stats and you have Strength, Intelligence, Agility and Constitution stat. So just include his name, his level and his Strength, Intelligence, Agility and Constitution.

Adding any more stats when it's not necessary in that scene just makes a clutter and distracts readers from reading your actual story. Eventually, your readers will get bored from reading useless stats that make no difference to the story. Status board is a 'tool' to cut down on word count. It is not the wonder weapon that makes your story awesome automatically. People want to read your story, not unnecessary trivia that has no bearing on the story.
