creatures that evolve into dragon

I think in China carp can evolve into dragon while in Korea it's a big snake called imoogi.

Are there legends or stories similar to that?

It's fairly common for kobolds, wyverns, and other draconian creatures to evolve into dragons (the western type) in various settings. Not sure if that's based on any specific story.

Any kind of lezard can evolve into western dragon depending the story setting.
For chinese dragon, it's either fish or snake that evolve into dragon.

And you can have mixed blood dragon. Mixed blood can be anything you think of, "Spider dragon", "Centiped Dragon", etc....
