So the concept of vocational schools/ guilds exist in medieval times, for smiths and artisans mostly. Put in fantasy and we have adventurer guilds, which is basically a place of odd jobs such as escorts to pest extermination, I don't see any systematic method of learning the trades of "adventuring".
The idea of someone, mainly peasants learning how to fight is by serfdom/ discipleship to a knight/ warrior most of the times and that dojos are more of an oriental thing.
It might be a me thing, but I often find dojos and sects in western fantasy context a funny idea, probably because the closest counterpart I see is in magic schools and those don't really reflect the relationship between the teacher and their disciple.
The whole "treat you teacher like your father" theme does not flag out obviously
