I've come across quite some stories that jump from ancient mythological times where monsters and demons roam freely to modern day times where those creatures don't exist at all. I was always fascinated with how that transition from widespread monsters to just humans and came up with a few good story ideas thru that.

What if you write the perspective of an apocalypse from a non-human's perspective. Like something happened and its the end of the world to their civilization, and humans are now all over the place and grow in numbers like zombies. And the nonhumans have to adapt and hide themselves so they don't get killed by this group that is now everywhere.

Dude that's just human history. What do you think we are? We are an invasive species.
You basically want to write about the perspective of a species we slowly drove to extinction through hunting. Or through building our homes over theirs

I think this is the setting of the fourth or fifth Underworld movie, though I don't really remember it that well. The vampires are being hunted to extinction, and the Lycans are extinct. And then the main character just gets dropped into the future with no idea what's happening until the plot progresses.

Just remember that most of your readers will be human.

All you have to do is ask a woolly mammoth.

Pretty much. Most stories are centered around human protagonists fighting against in a lot of cases, something that is non-human.
What if its the other way around? Ofc, there probably are stories that center around nonhuman protagonist vs human antagonist.
