A story where the main character is an "amortal" (explanation inside)

I've just found this short fiction and I've been wondering if there's a longer story about a similar character.

In short an amortal:
  • is a sentient collection of nature
  • isn't, never was and never will be alive
  • cannot be killed
  • its purpose or personal goal is to travel/explore the world, protect natural order and/or defend mortals from greater threats
  • generally friendly but in the grand scheme of things a completely neutral participant in most events
This list is just a combination of my impressions from the short story and whatever I'd like this character to be, it's by no means complete nor do all points need to be fulfilled.

Edit: I've just remembered about Zaria from Let's Explore and Enjoy and Lazy Floof's other works and she does fit some points, anything that fits those criteria would be fine as well:
extremely powerful but acts way below the scale she's capable of
generally does not care
exhibits strong emotions only in rare cases, only then takes things seriously
theoretically possible to kill, impossible in practice
does things almost exclusively for her own amusement

The closest stories I can think of with characters similar to that would either be Trafford's Trading Club. The main character is basically "the devil", he tends to be friendly but neutral (ie. Just wants to engage in trade), he can't die, and his main purpose to to spread knowledge about his shop throughout the world. Another story with a somewhat similar character would probably be (Tree of Aeons). It's an isekai story unfortunately, but the main character is very hard to kill, he literally is a tree, he expands his roots throughout the world, and he tends to be neutral in most events but he does fight.

what you are describing is pretty much a pagan god, read some mythology

Not sure I agree with the definition you gave, as at least the two last points are more moral aspects that don't really have anything to do with the distinction between mortal, immortal and amortal.
The main aspects are sentience (for a major character sapience might be good too) and the fact that the entity is outside the concept of life and death.

Grim Reaper style characters often match, but not all of them are amortal, some not even immortal, especially if it's more a job for a spirit like lifeform like in Bleach.

Marvel has Lady Death, the embodiment of the concept of death, which should be amortal, but isn't a main character.

The Oscillation has one main cast member that has a grim reaper form (which literally has a trait called amortal) that fits the three main points of the definition. I've fallen way behind so I'm not sure how relevant that form has been so far. It's not a permanent form either, so it might not be what you are looking for.

Other than that, I can't think of any others right now.
