Imagine a mage's connection with mana. In a cultivator's case, it's spiritual energy. The act of gathering spiritual energy (or similar terms) is cultivation. Unlike mages who can only use mana for spells and some limited things, cultivators can use spiritual energy for the same acts, and also empower their body. Something akin of a sage-warrior.

As for cultivation novels, it's somewhere like a prototype of progression genre (some may even argue it's a predecessor). But honestly, it's mostly like LitRPG but without status window.
