Any melting cheese will do, but I recommend a blended ratio of 1 part hard dry aged cheese to every 3 parts soft melting cheese. My personal favorite blend is Havarti, sharp cheddar, smoked gouda, low moisture mozzarella, and at least one hard aged cheese like blue cheese, parmasan, and/or feta.
