Conjuration creates something out of nothing, usually to do with summonings and the like, but also to create an object out of thin air.
Evocation is usually used for manipulating energy to form into something you want, like casting fire, lightning, etc...

Transmutation is usually changing one matter into another, most famous example being lead to gold.
Another example would be transforming into something else, like polymorph/shapeshift, or changing your nails into big claws, etc...

So what makes Conjuration and Evocation so different from one another that they have to make two different schools?

Conjuration makes something out of nothing.
Evocation requires something to be used as the source of energy to create it.

Example:
Mage snaps his fingers and creates a teapot filled with hot tea and pours you a cup. (Conjuration)
Mage snaps her fingers and the surrounding water elements converge into several sharp ice arrows that she shoots at an enemy. (Evocation)

The first example, the teapot, tea, heat for the tea, and teacup came from nothing. The mage conjured them out of thin air.
Second example, the ice arrows formed from the water element within the surroundings. The mage used pre-existing material.

In that case, what makes Evocation different from Transmutation?

Also, Conjuration is violating the laws of Conservation.
