The texture will change, like lettuce will be crispy but you can soak it in water, carrot will become chewy but they are great for soup, absorbing all the flavors while they rehydrate.
My grandma used to make good dehydrated cinnamon apple 'chips' with a dehydrator. It was more chewy than chips, but it was very delicious. I just wish I had gotten the recipe of those treats... Who knows, my uncle might know it, I hope. Now I am craving it... ˝/\___/\˝ (✿≧ᆺ,≦)
