To read about? Whichever one has a better sense of humor (so probably the witch).

To hang out with? The knightess - just more interesting and, unless we have wildly different politics, least likely to outright murder me (or worse) for saying the wrong thing (and if she does murder me, will PROBABLY do it quickly and almost painlessly, unlike the witch),

Witch, because she's less likely to be confused and/or conflicted about her feelings, and you'll know pretty quickly whether you fall into the category of "datable", "friends only", or "go away before i turn you into a frog".

The knight is going to be worried about whether a potential romance is going to interfere with her duties, is this a distraction from her doing her job, maybe be in denial about her feelings, etc.

Also fewer potential hang ups in general.

As a protagonist of a story or as a person to hang out with? Because I feel like for both, I'd say knightess. I feel like a majority of female protagonists are witches, and I personally enjoy a good sword fighting female lead, and for some reason a lot of the ones I've seen where the female lead does use a sword, she's weaker than a relevant male character, so I'd like to see one where that isn't the case. And as for as a person, I'd be terrified of a witch because she could just turn me into a frog. I could totally take a knightess. I won't specify in what way.

My answer is very subjective, I prefer witches because I am an immortal magical girl. :blob_melt:
When in doubt, both.
And over the course of my stories, both are frequently seen.

Some stand-out examples of both in said stories are:
Ravenna in The Elarian Chronicles; Duskfall, and the sisters, Aliya and Mikala in Aestelle Nocte.
Though none of them have been introduced yet in the respective stories, they do have relevant supportive roles within their respective casts.

Ravenna is the Fiendling Witch that joins up with Morrigan over the course of volume 1, and is often the voice of reason within her adventuring party.

Aliya and Mikala are the surviving members of Princess Seiara's entourage that land on Earth with her, and serve primarily as the Princess' guardians and handmaidens, and are rarely far from the Princess' side.

I can't say much more about them (without spoilers) though.
