Depends on what I'm writing but I generally tend to not use symbolism unless its a single reoccurring motif or an extended metaphor type deal. If not, my writing becomes less flexible and I run the risk of having a half-assed one which can confuse people.

I honestly do have a lot of characters talk like I do, at least my main ones. They speak really casually and talk exactly how I'd envision myself talking. If that can't be the case, I often think back to a movie that I've watched with similar characters. Evil dude? Make him speak like Darth...
