I came here hyped about a rant about how modern game design is too approachable and caters to low commitment players, instead I get "They want gaming to not only cater to it's current mainstream audience, which is stupid because they make up 60% of the playerbase."

AAA gaming today is both.

I want games to gatekeep certain audiences. Yeah, there should be games that are not for everyone because fuck you (not you who are reading this) and fuck your stupid ass for not being able to keep track of quests or read an in-game note for clues. Fuck off and play Raid Shadow Legends.

No, I'm not sorry about it.

And yes, that is why Indie games are always better than AAA. There are no shareholders wanting to see the line go up for infinity and dumb it down so a chipmunk could play it.

Without even watching the video, I can already tell it's got something to do with adjusting content for global audience.

It's because companies focus on profit, not making a great game - and what comes with that, immersion and content that matches the setting. That part is, unfortunately, often cut out in the most popular productions either because it may be offending or some other reason in the vein of "there's a small number of people that won't like it, but this will impact our profits so we won't include it". It's far less noticeable in indie games.

The other aspect of this is difficulty, which went down in a much similar way. As games opened up to much greater audiences, their content was gradually adjusted to match the wider audience, not the relatively small group of dedicated gamers.

Honestly, both are glaringly visible in a lot of games. I recently found ZZZ, and that one's actually a perfect example, both in terms of difficulty and content. From the most obvious things, there's relationships with Agents, but somehow there's not a hint of romance in the whole game, and there's a lot of combat, but there's absolutely no blood or wounds (not even as an option that can be turned on/off). And when playing hard missions at the recommended level with a decent team, I easily beat most in two-thirds to half the time it takes to get the highest score.

Games fundamentally changed for the worse when the people making them changed from a few dozen bros just making what they wanted, to a few hundred women yapping all day with a handful Asian guys imported from China/India doing all the actual work on the cheap.

Gatekeeping is something that happens automatically if the product is undesirable for the user.
I think what mh rise did was actually great, yes it maked the game softer with the attention of making it less time consuming because in all the entries before it took hours to archive anything. It opened the possibility for people that have not enough time for normal mh. I think this is the best example for when making a game softer makes actually sense. Far cry 6 made it easier for no reason, it ruined the game. Lesson of the day is that mh is great.

is like a MH with faster gameplay

I find it lucky that my interests in gaming lie in Real Time Strategy (RTS) and 4X rather than in stuff that forces their ideals down everyone's throats.
